JEFFERSON CITY, Mo. - Egg prices are soaring across the Midwest, forcing many consumers to look for alternative sources of protein.
According to the USDA, wholesale egg prices have hit nearly eight dollars per dozen, making eggs more expensive per ounce than ground beef or chicken.
The University of Missouri Extension Office says that while eggs remain a nutrient-rich option, consumers may need to adjust their diets to fit their budgets.
The rising costs are largely due to the spread of bird flu, which has forced the depopulation of entire poultry flocks, reducing egg supply.
MU Extension livestock specialists note that higher production costs and new regulations have also contributed to the price spike.
For those seeking alternative proteins, plant-based options such as tofu, beans, and lentils offer comparable protein levels at lower costs.
Meanwhile, for baking, substitutes like applesauce, yogurt, or vinegar with baking soda can replace eggs.
