Mozingo restaurant welcomed with ribbon-cutting

The Maryville Chamber of Commerce held a ribbon-cutting welcoming a new restaurant to the community. William Coy, located at Mozingo Lake Recreation Park, opened last weekend and was recognized by the chamber this morning. Owner and executive chef, Mitchell Cosby says he's pleased to be able to bring the...Farm to Market...concept to northwest Missouri.

"We try to source everything as closely and as locally as possible.  That doesn't mean we're going to be 100% with that.  But we do do our best to try to get everything as close as we can.  We're buying all our beef just south of town from Tim Hatfield.  Produce is just off of A-F highway.  We do go to Wathena, KS for a little bit of produce.  We're trying to do a little bit more upscale plating and using French techniques with our food.  I was classically trained in French cuisine, so we do try to cook with a lot of different French styles such as brazing, poaching...things of that nature."

 Maryville City Manager Greg McDanel says the opening of William Coy adds another dimension to Mozingo Lake Recreation Park.

"Coming out here to the Mozingo Lake Recreation Park and having the conference center open, the hotel on site, the restaurant just kind of finishes the entire vision.  Having William Coy's as the lessee here at the conference center, we couldn't be happier.  With the farm to table experience the importance of supporting our local agriculture community.  They just fit perfectly with what we do."
