It may be the middle of February, but there are stores and restaurants in Iowa that are serving locally-grown produce. The availability of the fresh and local food in the dead of winter is the result of some farmers expanding their growing seasons with the use of hoop houses or greenhouses. Lee Matteson with Lee's Greens in Nevada says that they are now growing produce year-round and the demand is strong.
In addition to the salad greens, local hoop houses are also being used to grow early tomatoes, zucchini, summer squash and cucumbers outside of what's considered the normal growing season in Iowa.
